The chocolate making processChocolate begins with the harvest of the cacao tree fruit. The fruit is harvested and the cacao beans are removed, fermented, and dried at or near the cacao farm. Dried beans are shipped and are roasted to achieve robust flavors. Starting with the whole cacao beans, Grizzly Chocolate follows the process below to produce great chocolate in Montana.

Handmade UniquenessBeginning in 2019, Grizzly Chocolate began making chocolate bars. The process is conducted in small batches, ensuring quality. Cacao beans are hand-sorted to remove any debris, the husk is separated from the bean to create cacao nibs. The nibs and sugar are placed into a stone grinder for 24-36 hours. After that, a controlled cooling tempers the chocolate and chocolate is hand-scooped into forms to create chocolate bars.

Grizzly Chocolate has conducted extensive experimentation to create some of the best chocolate flavors around, from the very sweet Maple Peak bar made with maple sugar, to the extremely dark Sunset Chocolate bar, every product and every batch is full of flavor and hard work.
